Bamberg
Bamberg, in Upper Franconia, Bavaria, is the home of rauchbier, lager brewed from malt dried over a beechwood fire.
Character
Franconian brewing town; smoked-malt lagers (rauchbier) are its historical speciality.
Smoke and lager
Rauchbier is a historical speciality of Bamberg. Its best-known producer, Schlenkerla, still kilns its own barley malt over an open fire of aged beechwood; its tavern at Dominikanerstrasse 6 is first documented in 1405, as Zum Blauen Löwen. Some form of smoked beer has probably been brewed in the town for at least five centuries. Bamberg also had its own beer ordinance in 1489, which, unlike Munich's, allowed yeast.
