Kriek (Oude Kriek)

Kriek is lambic refermented with sour cherries, traditionally the Schaarbeek variety. It is the original fruit lambic, and Oude Kriek is an EU Traditional Speciality Guaranteed.

Location: Brussels and the Pajottenland, Belgium · Pictured: Flemish red cabbage with apple

Method

Cherries added to lambic in the cask start a second fermentation; the beer is then bottled to referment.

Cherries and lambic

Kriek is the original and most popular fruit lambic. Sour Schaarbeek cherries are traditionally steeped in lambic in the cask, where their sugar sets off a secondary fermentation; the beer is then refermented in the bottle. Fruit was traditionally added by the blender or the café owner to widen the range of beers on offer. Modern versions may be sweetened; the traditional product is dry and tart. Raspberry (framboise) and other fruit lambics follow the same pattern.
