Pajottenland and the Senne valley

The countryside south-west of Brussels and the valley of the Senne are the home of lambic, the spontaneously fermented wheat beer behind gueuze and kriek.

Location: Pajottenland, Belgium

Character

Lambic brewers and blenders in and around Brussels and in the villages of the surrounding countryside.

Lambic country

Lambic is brewed in and around Brussels and in a few villages of the surrounding Pajottenland; brewing guides describe the area as the Senne valley and the Pajottenland. The brewing season runs from October to April, when nights are cool enough for wort to be left open overnight to catch wild yeasts and bacteria. The EU registration file for Oude Geuze cites a 1995 handbook, La Région du Lambic, for production going back at least to the early nineteenth century.
